About 4 years ago, I was at my highest weight which was 192 lbs. The crazy thing is at the time, I had NO idea. I didn't feel like I was 192 lbs. I knew that I wasn't skinny and fit but I definitely didn't think I could check the box of ‘overweight’. During this time, my high school sweetheart and I were moving towards the direction of marriage and the only thought I had when talking or thinking about the big day was, “I have to lose weight to be a ‘beautiful bride’.” The thought of being uncomfortable in my own skin on a day that I am celebrating my love for someone was crippling, it made the experience about weight instead of love, and that made me angry.

Ingredients 

  • 1, 28 oz can of whole tomatoes 
  • 1 whole onion, halved
  • 1/2 cup of cilantro
  • 1 jalapeno, seeded
  • 4 cloves of garlic
  • 1 tbsp of cumin
  • 1 1/2 tsp of salt
  • 1 tsp of black pepper

Instructions 

  1. Combine all ingredients in a food processor and pulse 10 times, or until desired consistency is reached

Tip: Perfect to use as a marinade for fish or chicken!

This Creamy Avocado Dressing recipe is guaranteed to change the way you think about taco night in your house! It is creamy, packed with flavor, and perfect for any salad or piece of protein you're making that night!  

Creamy Avocado Dressing 

  • ½ of an avocado
  • 4 Tbps of water
  • 1 Tbps of apple cider vinegar
  • ¼ cup of olive oil
  • ½ of a lime, juiced
  • 2 Tbps of cilantro

In a tall mason jar, add all the ingredients for the dressing and use your immersion blender to blend until smooth.

Step by Step Pineapple Pork Stir Fry!

Let’s talk about stir fry’s. They are the easiest way to toss whatever veggies and protein you have left in your fridge and still make a healthy fresh meal! They’re great for dinner, and also to take for lunch the next day! Follow this step by step recipe to see what we mean!

 Prep time: 10 minutes

Cook time: 15 minutes

 For the stir fry:

1 package of pork chops

1 bunch of scallions

3 bell peppers (of any color)

½ of a yellow onion

4 cloves of garlic minced

½ cup of cubed pineapple

For the sauce:

¼ cup of rice vinegar

Easy as 1-2-3 Mayo! 

Mayonnaise is a classic condiment, but when purchased at the store it can be full of fat and one serving can be more than 50% of your daily recommended sodium intake. Homemade mayo is the easiest condiment to make, just a few household ingredients and you can have the base of many great recipes!

Ingredients 

  • 1 Egg
  • ½ teaspoon of Himalayan pink sea salt
  • Pinch of black pepper
  • ¼ teaspoon of mustard powder
  • Juice from 1 lemon
  • 1 teaspoon of apple cider vinegar
  • 1 cup of olive oil (Substitute for avocado oil)

Instructions 

  1. Start by getting your immersion blender ready
  2. In a tall jar, add the all of your ingredients
  3. Starting with your immersion blender at the bottom of the jar, very slowly start to bring the blender up. Blending slower helps the mayo thicken along the way.
  4. Once all of your ingredients are blended, pop a lid on the jar and store in the fridge for up to two weeks!
