Let’s talk about stir fry’s. They are the easiest way to toss whatever veggies and protein you have left in your fridge and still make a healthy fresh meal! They’re great for dinner, and also to take for lunch the next day! Follow this step by step recipe to see what we mean!
Prep time: 10 minutes
Cook time: 15 minutes
For the stir fry:
1 package of pork chops
1 bunch of scallions
3 bell peppers (of any color)
½ of a yellow onion
4 cloves of garlic minced
½ cup of cubed pineapple
1 bunch of scallions chopped
1 tsp of Pink Himalayan sea salt
1 tsp Black pepper
For the sauce:
¼ cup of rice vinegar
¼ cup of coconut aminos
1 tsp of garlic salt
The first thing you want to do is chop all of your ingredients. The cook time is pretty quick so it’s best to have everything ready to go.
In a non- stick skillet heat up 1 tablespoon of avocado oil. Once it’s nice and hot add in your pork. Let it cook on a medium-high heat for about 6 minutes or until almost fully cooked. Then add your chopped peppers, onions and garlic.
While the veggies are cooking grab a measuring cup and make your simple stir-fry sauce! Add the vinegar, coconut aminos, garlic salt and give it a stir.
After the veggies have been cooking for about 5 minutes add your diced pineapple, scallions, and sauce.
Turn the stove top up to a high heat and let your stir-fry continue to finish cooking for about 2 minutes. Once finished add your stir fry to a bed of cauliflower rice and garnish with a lime wedge, some additional chopped scallions or crushed cashews!
