This Creamy Avocado Dressing recipe is guaranteed to change the way you think about taco night in your house! It is creamy, packed with flavor, and perfect for any salad or piece of protein you're making that night!  

Creamy Avocado Dressing 

  • ½ of an avocado
  • 4 Tbps of water
  • 1 Tbps of apple cider vinegar
  • ¼ cup of olive oil
  • ½ of a lime, juiced
  • 2 Tbps of cilantro

In a tall mason jar, add all the ingredients for the dressing and use your immersion blender to blend until smooth.

Step by Step Pineapple Pork Stir Fry!

Let’s talk about stir fry’s. They are the easiest way to toss whatever veggies and protein you have left in your fridge and still make a healthy fresh meal! They’re great for dinner, and also to take for lunch the next day! Follow this step by step recipe to see what we mean!

 Prep time: 10 minutes

Cook time: 15 minutes

 For the stir fry:

1 package of pork chops

1 bunch of scallions

3 bell peppers (of any color)

½ of a yellow onion

4 cloves of garlic minced

½ cup of cubed pineapple

1 bunch of scallions chopped

1 tsp of Pink Himalayan sea salt

1 tsp Black pepper

For the sauce:

¼ cup of rice vinegar

¼ cup of coconut aminos

Easy as 1-2-3 Mayo! 

Mayonnaise is a classic condiment, but when purchased at the store it can be full of fat and one serving can be more than 50% of your daily recommended sodium intake. Homemade mayo is the easiest condiment to make, just a few household ingredients and you can have the base of many great recipes!

Ingredients 

  • 1 Egg
  • ½ teaspoon of Himalayan pink sea salt
  • Pinch of black pepper
  • ¼ teaspoon of mustard powder
  • Juice from 1 lemon
  • 1 teaspoon of apple cider vinegar
  • 1 cup of olive oil (Substitute for avocado oil)

Instructions 

  1. Start by getting your immersion blender ready
  2. In a tall jar, add the all of your ingredients
  3. Starting with your immersion blender at the bottom of the jar, very slowly start to bring the blender up. Blending slower helps the mayo thicken along the way.
  4. Once all of your ingredients are blended, pop a lid on the jar and store in the fridge for up to two weeks!

Spinach Basil Pesto 

Say goodbye to boring old pesto and hello to our Spinach Basil Pesto! We loaded this baby up with spinach, Basil and switched out the traditional pine nut for walnuts instead. Walnuts are packed with omega 3 fatty acids and have high amounts of vitamin E making them the perfect addition to our pesto! 

Prep time: 5 minutes
Total time: 8 minutes

Ingredients 

  • Cup of walnuts
  • 1 ½  Cup of basil
  • 1 Cup of spinach
  • The juice from ½ a lemon
  • 1 teaspoon of apple cider vinegar
  • Cup of Olive Oil

Instructions

  1. In a food processor add all ingredients except for the olive oil.
  2. Pulse ingredients a few times, then while the food processor is on add the olive oil from the top. Take the lid off give it a stir. Pulse until you’ve reached desired consistency!
